          In this article I tried to put together some of the simpler yet great-tasting recipes. The milk pasta soup, for example, is a family recipe that originated among busy mothers, who wanted to make something fast and easy yet appealing to the kids. The mushrooms and the pork would make a good dinner that could go with the salad.
          The cranberry candy is my personal favorite, as well as it also is for many Russian kids. Cranberries are usually too sour to eat on their own, but when inside the thin crispy shell sugar shell, they are unforgettable and literally melt in your mouth. Besides, it is a very healthy snack, full of vitamins, which are especially necessary after a long winter.

Cranberry Candy 1 egg white
¾ to 1 cup sugar
1 tbsp lemon juice
large firm berries

          Beat the egg whites together with the sugar and lemon juice into a firm foam. Wash the berries thoroughly with cold water to remove any dirt, stalks and damaged berries, and dry them on a paper towel. Coat each of the berries in the sugar mixture and let them dry out until the coating sugar layer is crisp.

Milk Pasta Soup

1½ cups pasta (any small variety)
1-2 cups water
3-4 cups milk
salt

          This recipe is mostly improvisational, so the amounts may vary according to how runny you want your soup. What you want to do is prepare the pasta normally only use the salted milk-water mixture instead of plain water. This soup is especially welcome when someone is sick.

Mushrooms in Sour Cream 2 lb fresh mushrooms
1 small onion
15 ounces sour cream
black pepper
salt
vegetable oil

          Chop the mushrooms and onions into relatively small pieces. Heat a small skillet with vegetable oil over high heat, add some peppercorns. Stir in the onions and cook just until they start to brown, then stir in the mushrooms and lower the heat to medium. Let the mushrooms cook until just tender, then add salt, black pepper, and pour the sour cream over the mushrooms. Let simmer for about 5 10 minutes, and remove from heat. This dish is tasty both cold and hot, with a side of potatoes boiled whole or fried in large pieces, and a fresh salad.

Breaded Pork Rolls

1 lb pork
4 garlic cloves
1 egg
breadcrumbs
butter and vegetable oil
black pepper
salt

          Cut the pork into medium to large pieces, pound it a little to make it more tender, sprinkle with salt and black pepper. Chop the garlic very finely, put onto the pounded pork pieces and rub it in slightly. Beat the egg until yolk and white are evenly mixed, roll up the pork into, roll it in the egg and breadcrumbs. Fry in a hot mixture of butter and vegetable oil. Serve hot with a garnish, sprinkled with fresh greens.

Carrot Salad

3 large carrots
2 cloves garlic
1½ tbsp mayonnaise
ground walnuts
salt, sugar to taste

          Finely grind the carrots, then add minced garlic, and all of the other ingredients, mix well.
